The Very First!! Best Pumpkin Bread

Hello and welcome to my new blog.  I decided to start off with one of my most favorite recipes.  This one has been modeled after Starbuck's pumpkin loaf, but has been modified to use non-refined ingredients.  Feel free to reduce the amount of sugar used, as I typically use at least a half cup less and it is still fantastic.  By far the best pumpkin bread/loaf recipe ever!

Pumpkin Bread

  • 1 (15 oz) Can (or 2 cups) Pumpkin Puree (unseasoned)
  • 4 Eggs
  • 1 Cup Vegetable Oil
  • 2/3 Cup Water
  • 3 Cups Brown Sugar (or less)
  • 3 1/2 Cups Whole Wheat Flour (do not sift)
  • 2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Nutmeg
  • 1/2 tsp Ground Cloves
  • 1/4 tsp Ground Ginger
  • 1 Cup Nuts ( I use chopped walnuts)
  • Shelled Pumpkin Seeds (to top)
Preheat over to 350 F.  Grease and flour two large loaf pans (or three smaller loaf pans).

In a large bowl, mix together pumpkin, eggs, oil, water, and sugar until well blended.

In a separate bowl, mix together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.  Stir dry mixture into pumpkin mixture until just blended.  Stir in nuts.

Pour mixture into loaf pans and sprinkle with pumpkin seeds.

Bake about 50 minutes.  Loaves are done when toothpick inserted in center comes out clean.  You may need more baking time if you are using larger pans.

Enjoy!!

P.S. please let me know how this recipe works for you or any great modifications.
