Pumpkin Bread
- 1 (15 oz) Can (or 2 cups) Pumpkin Puree (unseasoned)
- 4 Eggs
- 1 Cup Vegetable Oil
- 2/3 Cup Water
- 3 Cups Brown Sugar (or less)
- 3 1/2 Cups Whole Wheat Flour (do not sift)
- 2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1 1/2 tsp Salt
- 1 tsp Ground Cinnamon
- 1 tsp Ground Nutmeg
- 1/2 tsp Ground Cloves
- 1/4 tsp Ground Ginger
- 1 Cup Nuts ( I use chopped walnuts)
- Shelled Pumpkin Seeds (to top)
Preheat over to 350 F. Grease and flour two large loaf pans (or three smaller loaf pans).
In a large bowl, mix together pumpkin, eggs, oil, water, and sugar until well blended.
In a separate bowl, mix together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Stir dry mixture into pumpkin mixture until just blended. Stir in nuts.
Pour mixture into loaf pans and sprinkle with pumpkin seeds.
Bake about 50 minutes. Loaves are done when toothpick inserted in center comes out clean. You may need more baking time if you are using larger pans.
Enjoy!!
